The cellarer essentially determines the quality and character of a sparkling wine through his or her selection and combination of various wines. From the various grape varieties, locations and vintages, only his or her particular sense of smell and taste can select the wines that mutually enrich another in terms of their bouquet and taste.

To find such a successful composition is therefore a real art. Incidentally, it is referred to as “cuvée” using technical terminology. Therefore, as early as the wine selection, the cellarer assesses how the various wines will behave during their subsequent development into sparkling wine. Through the great skill of finding the the ideal combination, the cellarer ensures a consistent character and the unchanging quality of a brand of sparkling wine – regardless of the vagaries of nature.
