Champagne Biscuits

  • 300 g flour
  • 200 g icing sugar
  • 3 tsp. vanilla sugar
  • 3 organic limes
  • 250 g butter
  • 200 g white chocolate
  • 8 tbsp. champagne

Would you’d like to have special Christmas biscuits this year? Then you absolutely have to try this recipe:
First, you'll need to make the dough. Then zest two limes and knead into a smooth dough with flour, 125g icing sugar, vanilla sugar and 180g butter. Wrap in cling film and place in the fridge for at least 30 minutes. Then roll out thin on a floured work surface, and cut out shapes of your choice. Bake the biscuits on a baking sheet covered with baking paper for 10 minutes (don't forget to preheat the oven to 175 degrees!) Then take out of the oven and allow to cool on a wire rack.

Now it is time to make the filling for the biscuits.
Zest and juice the third lime. Slowly melt the white chocolate in a bain-marie. At the same time, beat 70g butter and 75g icing sugar until fluffy. Stir in the lukewarm melted chocolate and add champagne, lime zest and lime juice. Stir well until the mixture is creamy and light.

Finally, stick the biscuits together two at a time, by putting some champagne and chocolate mixture on one, and carefully placing another on top. If you want, you can dust the sparkling biscuits with icing sugar to finish. Mmmmhm!
