Here you will learn what makes a good sparkling wine a really good sparkling wine, as well as what sets it apart. In the process, you are not just allowed to watch, but also taste, experience and marvel. You will learn about the relationship between modern craft and history, and discover the art of traditional bottle fermentation. During this process, secondary fermentation takes place in the individual bottles. How does that work? Sugar and yeast are added to the wine composition and the bottles are subsequently left to rest for months. Afterwards, riddle racks ensure that the bottles are moved on a daily basis over a period of four weeks so that the yeast can collect in the neck of the bottle before it is removed. This process is called dosage. Only then do the bottles receive a cork, are secured with wire brackets and finally look the way that you are sure to recognise.
