Even the name has a ring to it, doesn’t it? That’s why it is no longer permitted outside of the Champagne region. The technical background to this: This is the oldest manufacturing method, in which it is mandatory for the wine’s secondary fermentation process to take place inside the bottle. But, also important: From the secondary fermentation process up to its consumption, the sparkling wine remains in the same bottle. Also refer to bottle fermentation.
