The large capacity process is a widespread sparkling wine manufacturing method and was perfected in 1936: The secondary fermentation process takes place in large, pressure-proof stainless steel containers. This – in contrast to bottle fermentation – enables the temperature and operation to be constantly monitored during fermentation and subsequent storage. The biological process of fermentation takes place in exactly the same way as in the bottles. But just imagine it in a scale one thousand times larger.
