Very important for our favourite drink: Sparkling wine is created during the secondary fermentation of wine that has already been produced. Sugar and yeast is added to a wine mixture – Cuvée – in precisely measured quantities. And lo and behold, the sugar causes the yeast to “come alive” and turns it into carbonic acid (carbon dioxide), with an additional alcohol percentage. These several weeks of fermentation always take place in pressure-proof, closed containers – either in bottles or in large, stainless steel containers.
