Dom Perignon was a French Benedictine monk and the administrator of the Abbey at Hautvillers. The discovery of Champagne has been readily attributed to him. But, unfortunately: Sparkling wines also existed before his time. Nevertheless, he of course made a significant contribution to viticulture and the further development of manufacturing methods. Above all, he recognised the value of the composition of different wines to make Cuvée. Merci!
