Asti Spumante?

Asti Spumante is something for those of us with a sweet tooth: a smooth sparkling wine from the Moscato grape that originates either from Asti, Cuneo or Alessandria (Northern Italy). What’s so special about it? There is one exception in terms of its production: The first fermentation process of the grape juice is halted by supercooling when 7 to 9 per cent alcohol content has been achieved. The yeast is subsequently filtered out and no secondary fermentation process takes place.
